I actually found this one myself, though it's basically just dressing up some asparagus.
1 lb. fresh asparagus, trimmed
2 thin slices prosciutto, cut into 1-in. wide strips (I use more than that)
1 tbsp. olive oil
1/4 tsp. salt
1/8 tsp. ground black pepper
2 tbsp. chopped roasted red peppers
1/4 c. crumbled goat or feta cheese
1. Preheat oven to 450F. Line a baking pan with foil.
2. Wrap asparagus spears in bundles of 3-4 with a strip of prosciutto around middle. Place bundles in a single layer in foil-lined pan. Drizzle with olive oil. Sprinkle with salt and pepper. Top with red peppers.
3. Bake 8-10 min or until asparagus is tender-crisp. Sprinkle with cheese and bake 5 more min.
Makes about 6 servings.
