pumpkin bread

Ok, I've made this a few times already since getting this recipe maybe a month ago.  I've had some people ask me for the recipe now, so I'm posting it on here because it is in fact awesome and worth sharing.  :)  I can say that because I got it from a college friend and had nothing to do with coming up with it.  In fact, I tried a few others last year that were dry and so-so on the flavor.-- This is the opposite.  I love it and have now vowed to only make it when large amounts of people are going to be around so that I don't consume it all myself in one sitting.  So thank you Kelly and I really hope, if you ever read this, that you are ok with me sharing it!!

pumpkin bread:
15 oz. pumpkin puree
4 large eggs
1/2 Tbsp. vanilla
1/2 c. vegetable oil
1/2 c. applesauce
2/3 c. water
3 c. sugar
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice

1. Preheat oven to 350 F.
2. Grease 3 7x3 loaf pans and set aside.
3. In a large bowl, mix together wet ingredients.  In another, mix dry ingredients and gradually add to wet mixture until just blended.
4. Pour into prepared pans and bake for 50- 60 min, until toothpick comes out clean.

I can't even tell you how amazing it is fresh out of the oven.  Hmmm.... now to come up with a reason to have large amounts of people around...
