mock fried rice

Ok, taking a break from kid posts.  I have jumped on the low-carb wagon with Bran to kick any remaining baby weight, and since I cannot handle eating a package of pepperonis or lunch meat in one sitting the way he is able to do, I've been on a search for good, low-carb meals.  Meet "mock fried rice," which uses cauliflower instead of rice.  Sounded like a terrible idea, especially when it's only been a year or two since just the mention of the word cauliflower no longer makes me want to vomit, after being served curry fried cauliflower for like a month straight in India. Maybe out of desperation, I gave it a whirl and it was a happy surprise to both Bran and I.  Instead of putting meat in it, I made a good beef and broccoli dish to go with it. - very satisfying and I still lost weight.  Anyways, if you're desperate for a low-carb option too....  :)

mock fried rice-
1/2 head raw cauliflower, grated to make 3 1/2 cups
3 green onions
1 clove garlic, minced
1/2 tsp ginger
3 Tbsp reduced sodium soy sauce
3 eggs, beaten
olive oil
cooked chicken, beef, pork, shrimp ham, turkey (your choice)
(can add peas or pods, but will add more carbs)

1. In a wok or large flat skillet, heat enough oil to cover the bottom.  Fry minced garlic with finely diced white part of onions about 1 minute.
2. Add grated cauliflower and fry for 4-5 minutes, stirring constantly.
3. Add soy, ginger, diced green onion tops, and pre-cooked meat.  Stir to mix well and brown a bit.
4. Push mixture to one side of pan.  Add more oil if necessary and scramble eggs in empty side of pan until done but still moist.  Stir eggs into "rice" mix and remove from heat.

Serves 3-4 at about 5-7 carbs per serving.  Stores and re-heats great!
